My own version of coronation chicken:
Slice/dice chicken breast. Mix plain soft cheese or quark in a bowl with mild curry powder, sultanas and chopped apricots (I also like to add a pinch of ginger but each to own taste). Mix in Chicken pieces and put big dollops on buttered brown bread.
